It`s the summer season and even though it`s not always sunny in all parts of Europe, at my last visit to London, I sure did find summer over there. Okay, it wasn`t at some beach, as you would expect from the #BeachThursday girl! It was inside the new Quarter Bar at London Bridge Quarter.
I was presented with a virgin Mojito (yes, no alcohol, it was early afternoon!) and it was one of the best I`ve had. So that`s why I asked for the recipe and I wanted to share it with you.
Mojito Recipe
The ingredients: Glass of crushed ice, half a glass of lemonade, quarter glass of apple juice, teaspoon of brown sugar, a handful of mint leaves and half a lime.
Then mash the brown sugar and half the mint leaves together, while adding a little of the apple juice when mashing.
Add the rest of the apple juice, the lemonade, the mint and the lime juice. Sit back and enjoy!

Refreshing Cocktail
This is an own creation fabricated while experimenting in the kitchen. I call it an Isabelle’s Travel Cocktail 🙂 It’s based on a Mai Tai recipe consisting of dark rum, Amaretto, Cointreau (or triple-sec) and lemon juice. For me the lemon was too much, so I added some pineapple juice to soften the taste, added some leftover champagne and what do you know, fabulous taste!
Ingredients for 1 cocktail: 20 ml (0.68 oz) dark rum, 15 ml (0.68 oz) Amaretto, 15 ml (1/2 oz) Cointreau (or Triple-sec), 20 ml (0.68 oz) lemon juice.
I added pineapple juice and champagne. The pineapple you can just add that to your own taste, as well as the champagne. Make it more refreshing by adding some ice cubs, decorate the glass with a fresh piece of pineapple… and you`ve got your own little vacation in your hand!
