When in Italy you have to try Gelato, right? Italy has a well-known reputation for serving divine dishes. If there is one place in the world where you can challenge your taste buds, it`s Italy.

During my Tuscany trip, I paid a visit to Gelateria De`Coltelli where I had the privilege to meet with Gianfrancesco Cutelli. It wasn`t hard to tell this was a man with a true passion for his job. He showed us around his gelateria and explained with big hand gestures how gelato is made.
But first things first, what`s the difference between ice cream and gelato? A question I asked myself. It is common throughout the world to translate gelato into other languages as ice cream. However there are noteworthy differences.
Ice cream has more fat than Italian gelato which exists of more sugar and water. Gelato has less air mixed in during the manufacturing process, which provides a greater flavor experience: more flavor due to less air. When serving gelato it requires a slightly higher serving temperature, because less air also means more density. That`s the reason why you see those special serving trays instead of buckets and why it`s spooned out. Authentic Italian gelato is made with fresh ingredients that makes it creamy and colorful. Gianfrancesco selects the best raw materials in order to obtain the best taste and he tries to get them biological as much as possible. De`Coltelli uses only fresh seasonal fruit, which means some flavors are only available in some periods of the year. De`Coltelli offers a unique experience in Tuscany because it makes hand-crafted, natural and biological gelato.
So if you`re traveling through Tuscany and are visiting Pisa, make sure you schedule a stop at this gelato heaven in Pisa called De`Coltelli. My recommendation would be try the Kiwi flavor that was delicious or the chocolate … to die for!
