The first time I took cooking classes was when I was in Jordan and I enjoyed it very much. It`s a great way when you`re traveling to learn about the local food and the cooking traditions. During my recent trip to Mexico, I had the opportunity to follow a cooking class given by the talented Chef Jetzabel Rojas at the Viceroy Riviera Maya.

How was the main course made?
The ingredients for the Tikin Xik Fish:
Black Grouper, Red Onion, Tomato, Green Tomato, Bell Peppers, Epazote, Mexican Rice
After the vegetables are all cut up and the fish is marinated. The banana leaves are prepared and there is a first layer of the vegetables that goes in.
Then the marinated fish is stacked on top of that and another layer of vegetables goes on top.
All this will be seasoned with herbs and a parcel is made with the banana leaves sealing in moisture and flavor. The food will be cooked on a wooden fire in the ground.
After you`ve taken part in the cooking class, you`ll be able to enjoy the menu in a beautiful setting. If you feel like taking a nap after all that hard work, there`s a bed waiting for you!
If you`re interested in following a cooking class at the hotel yourself, the price per person is USD55 plus 11% tax & 15% service charge. It includes the menu mentioned above, “aguas frescas” (traditional Mexican natural fruit flavor beverages) , 1 glass of Mexican Wine.

I just love how colorful Mexican cooking is. I have only taken one official cooking class, it was in Spain to learn how to make paella. A ton of Fun!
